A proper crispy baked chicken with additional flavour from sweet southern orange. One roast generously feeds the whole family or a group of friends. Who goes for the legs, who wants the breast?!
You will need:
1.5 kg chicken
200 g Salvest Provence Mayonnaise
handful of fresh thyme
sea salt flakes
Mix together the mayonnaise, chopped thyme and grated orange zest. Rub chicken skin with the sauce. Quarter the orange and stuff it inside the chicken. If you have leftover sauce, add it inside the chicken. Sprinkle sea salt flakes on top and season with black pepper. Next, tie the chicken feet together with a cotton cord and place in the oven breastbone up.
Next, lift the chicken in the oven and bake at 230 ºC for 20 minutes until the chicken is crispy on top. Lower the heat to 180 ºC and bake for another 60 minutes until the chicken is fully cooked (when clear juice oozes out when poking the meat with a tip of a sharp knife). Let the chicken rest under foil for 10 minutes before serving.
